APPLE BUTTER (OLD-TIME) 
15 gallons water
14 gallons apples
40 pounds sugar
1 gallon vinegar

Makes 10 gallon apple butter.

Pour 10 gallons of water into kettle and measure the depth and mark it on the stick used as measure. Add the apples and the remainder of the water and the vinegar, let it cook a little while, then add the sugar. Let it cook down until it reaches the 10 gallon mark on the stick.

This is a famous recipe made in the hill counties of Ohio, where apples grow in profusion and where the people make this famous apple butter in great quantities but do not make any cider.
