HANNIGAN SODA BREAD | |
1/4 c. sugar 3 1/2 c. flour 3/4 c. ground oatmeal 2 tsp. baking powder 1 1/2 tsp. baking soda 1 tsp. salt 1/2 c. butter 1 1/2 c. raisins 1/2 to 3/4 c. miniature chocolate chips 2 eggs 1 1/2 c. buttermilk Combine first 6 ingredients. Cut in butter, stir in raisins and chips. Combine beaten eggs and buttermilk; stir into flour. Knead lightly on floured surface; you may need 1/4 cup flour. Divide into 2 parts. Shape into balls, flatten slightly. Slash tops in a "X." Place on greased sheet and bake for about 35 to 40 minutes. Brush loaves with melted butter last 5 minutes. To serve, cut in half, break off hunks and then butter. Makes 2 loaves. |
