EGG CASSEROLE 
1 doz. eggs
8 oz. sour cream
1 tsp. salt
2 sm. tomatoes, peeled and cut into sm. pieces
2 celery stalks, chopped finely
1 sm. can finely chopped mushrooms
1 chopped green or black olives
3 pkgs. (8 oz.) cheese, shredded (2 Velveeta and 1 taco mix)

Crack eggs. Mix together with fork. Add all other ingredients with exception of Velveeta cheese packet. Mix together and pour into large casserole dish. Sprinkle Velveeta shredded on top until completely covered. Cook at 325 degrees 45 minutes or until cheese is melted and eggs are cooked.
