YUM - YUM SALAD 
1 (#2) can crushed pineapple
1 c. sugar
Juice of 1 lemon
1 env. plain gelatin
1/2 c. water
1 c. chopped pecans
1 c. grated cheese, mild cheddar
1 tbsp. green pepper
1 tbsp. pimentos
1/2 pt. whipping cream

Combine pineapple, sugar, lemon juice, and let simmer 5-10 minutes. Add gelatin in hot mixture. Put in refrigerator until chilled.

Add pecans, cheese, green pepper, pimentos, and whipping cream. Chill and serve on lettuce with crackers.
