MABEL'S VEGETABLE MINESTRONE
SOUP
 
1 onion diced
1 clove garlic, minced
2 tbsp. olive oil
3/4 lb. beef, 1/2 inch cubes
2 (14 oz.) cans beef broth
2 1/4 c. water
1 tsp. Italian seasoning
1 1/2 c. drained shelled beans (red, pink, pinto or kidney)
1 (16 oz.) can tomatoes, cut up
2 carrots, sliced
1 med. potato, diced
1/2 pkg. (10 oz.) frozen leaf spinach, opt.
1 1/2 oz. fine noodles or spaghetti

Saute onion and garlic in oil until onion is tender. Add beef cubes, stir to coat with oil. Add beef broth, water and Italian seasoning. Cover and simmer 1 hour.

Add beans, tomatoes, carrots and potato, simmer 20 minutes. Stir in spinach (optional) and noodles and simmer 10 more minutes.

Yields 8 to 10.
