BANANA BRAN MUFFINS 
3/4 c. all-purpose flour
3/4 c. whole wheat flour
1/2 c. unprocessed oat bran, uncooked
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1 egg
3/4 c. firmly packed brown sugar
1 1/3 c. mashed ripe bananas
1/2 c. raisins or chopped walnuts
1/3 c. vegetable oil
1 tsp. vanilla extract

Combine first 7 ingredients in a large bowl; make a well in center of mixture. Set aside. Combine egg and brown sugar in a medium bowl; beat at medium speed on an electric mixer until smooth. Add bananas, raisins, oil, and vanilla; beat well. Add to flour mixture, stirring just until dry ingredients are moistened. Spoon batter into greased muffin pans, filling 2/3 full. Bake at 375 degrees for 20 to 25 minutes. Remove from pans immediately. Let cool on wire racks. yield: 1 dozen.
