WELSH COOKIES 
6 c. flour
3/4 tsp. baking soda
2 tsp. baking powder
1 tsp. cream of tartar
2 c. sugar
1 tsp. salt
1 tsp. nutmeg
2 c. shortening
3 beaten eggs
1 c. currants
1/2 c. milk
1/2 tsp. vanilla

Sift first 7 ingredients into a large bowl. Cut in shortening. Add remaining 4 ingredients. Mix thoroughly with a wooden spoon (do not use an electric mixer). Chill batter about 45 minutes. Roll out on floured board and cut into 2 inch circles. Fry on each side. Sprinkle with granulated sugar. (I use an electric skillet at 350 degrees, turn over when brown.) Do not overcook or they will dry out.
