TEXAS EGG CASSEROLE | |
1 lb. mild ground sausage 9 eggs 3 c. milk 3 c. grated cheddar cheese, mild or medium depending on your preference 1 1/2 tsp. dry mustard 3 slices bread This casserole must be prepared the night before serving. Grease the bottom of a glass 13 x 9 pan. Brown the sausage and drain well. In a large bowl, mix the eggs and milk. DON'T beat the eggs, just mix them. Add the cheese and mustard. Break the bread into small pieces and drop into the mixture. Add the sausage; mix well. It will be like soup consistency. Pour into the prepared pan. Refrigerate overnight. Preheat oven to 350 degrees. Cover the pan with aluminum foil. Bake 30 minutes. Remove the foil. Bake another 25-30 minutes until the casserole is set and top is golden brown. |
