SWEET POTATO DISH 
3 med. sweet potatoes
1 (8 oz.) can crushed pineapple
1/2 tsp. finely shredded orange peel
1/2 c. sweetened orange juice
1 tsp. cornstarch
1/4 tsp. ground cinnamon
Dash of nutmeg

Cook potatoes until tender. Peel. Cut into 1/4" slices. Drain pineapple, reserving juice. Stir together pineapple juice, orange juice, cornstarch, cinnamon and nutmeg. Cook and stir over medium heat until the mixture is thickened and bubbly. Cook and stir 2 minutes more. Stir in potatoes, orange peel and pineapple. Heat through.
