THE GOVERNOR OF NEW YORK'S BAKED LONG ISLAND BLUEFISH | |
CRUMB MIXTURE: 1 lb. plain bread crumbs 1/2 c. sherry 1/2 c. melted butter 3 tbsp. paprika 1 tsp. white pepper, ground 1 tsp. onion powder 1 tsp. garlic powder 1 tsp. ground thyme 1/2 tsp. salt Bluefish fillets Water Melted butter to drizzle Place all ingredients in electric mixer with paddle. Mix at lowest speed. Add sherry and melted butter. Mix until thoroughly absorbed. Place bluefish fillet on sizzle platter, skin-side down. Add enough water to cover bottom of sizzle platter. Pack crumb mixture on top of bluefish fillet. Drizzle with melted butter. Place fish in a preheated 350 degree oven. Bake for 25 minutes. Serve immediately. Crumb mixture will keep for weeks in the refrigerator and can be used on all seafood. |
