DATE-NUT PUMPKIN BREAD | |
1 c. butter 1 1/2 c. sugar 4 eggs 2 c. canned pumpkin 3 c. sifted flour 1 tsp. salt 2 tsp. baking powder 1/2 tsp. baking soda 1 tsp. cinnamon 1 (8 oz.) pkg. dates, cut up 1/2 c. raisins 1 c. chopped nuts (pecans) Cream butter and sugar. Add eggs and beat. Add pumpkin and mix well. Add sifted flour, salt and baking powder, baking soda and cinnamon. Add to pumpkin mixture and beat well. Add dates, raisins and nuts and mix well until coated. Bake in regular loaf pan (buttered). Bake at 375 degrees for 60-75 minutes. Makes 2 loaves. |
