2 lbs. Ricotta
2 c. powdered sugar
4 eggs
1 1/2 tsp. vanilla
1/2 tsp. almond extract
1/2 tsp. rum extract
1 lemon or orange rind

Lightly grease and flour springform pan (9 inch). Combine all ingredients best until creamy. Bake 40 minutes. Place on rack until cool then refrigerate. Enjoy.
