CAULIFLOWER AU GRATIN 
4 c. cut up cauliflower
4 tsp. butter
2 cloves garlic, minced
2 tbsp. all-purpose flour
1/2 tsp. salt
Dash cayenne pepper
2 c. evaporated skim milk
4 oz. (1 c.) shredded low-fat sharp Cheddar cheese
1 c. frozen whole kernel corn, cooked & drained thoroughly
2 tbsp. chopped parsley

1. Preheat oven to 350 degrees.

2. In steamer or microwave, cook cauliflower until tender. Set aside.

3. In a large deep saucepan melt butter. Add garlic and lightly saute 1 minute. Stir in flour, salt and cayenne.

4. Gradually add milk, stirring constantly, until sauce boils and thickens. Adjust seasonings.

5. Stir in 3/4 of the cheese, all corn and parsley.

6. Arrange cauliflower in shallow baking dish.

7. Cover with sauce and sprinkle remaining cheese on top.

8. Bake until top is lightly browned and bubbling, about 30 minutes. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
