MEXICAN CORNBREAD MEAL | |
1 lb. ground beef 1 1/2 c. yellow cornmeal 1 c. all-purpose flour 3 tsp. baking powder 3/4 tsp. salt 2 eggs 1 1/2 c. buttermilk or milk 1/4 c. cooking oil 1 can yellow cream style corn 2 finely chopped jalapeno peppers 1 c. grated cheese 1/2 c. chopped onion 1/2 tsp. garlic powder Salt and pepper to taste Brown ground beef; drain. Add 1 jalapeno pepper, the onion, garlic and salt and pepper to taste. Simmer, then remove from heat. Combine cornmeal, flour, salt, baking powder. Add eggs, milk, cooking oil, cream corn, and jalapeno pepper. Mix well. Pour half of mixture in 9x13 baking dish. Layer meat mixture on top. Layer cheddar cheese. Cover with remaining cornmeal mixture. Bake at 350 degrees for 1 hour. |
