BUTTERNUT SQUASH CASSEROLE 
4 lb. butternut squash
1 c. sharp Cheddar cheese, shredded
1 c. milk
1 tsp. cinnamon
1/2 c. bacon bits
1/2 stick butter, melted
1 c. Ritz crackers, crushed

Cut squash in large pieces, removing skin and seeds. Steam squash, remove from heat and let drain for about 1 hour.

Mash squash and add remaining ingredients. Mix well and pour into casserole dish. Sprinkle crushed crackers on top and bake uncovered in 350 degree oven for about 45 minutes or until crackers are golden brown.
