FRIED RICE 
2 c. uncooked rice
4 stalks celery, diced small
1 med. onion, diced small
3 lg. carrots, shredded
2 tbsp. oil
1 raw egg
1 tbsp. soy sauce
2 c. diced ham or 2 c. fried sausage or 2 c. diced cooked shrimp, optional choice

Cook rice and set aside. Heat skillet very hot add 2 tablespoons oil, onions, celery and carrots. Stir until vegetables are almost tender. Turn skillet heat down and add rice and meat or shrimp of your choice. Stir often. Slightly beat egg and add soy sauce to egg. Right before serving add egg to skillet stirring until combined with rice mixture. Serve in separate small dishes.

Serve with peppered beef skillet (main dish), sweet sour pork (main dish), Chinese Almond cookies (cakes and cookies) and ginger fruit oriental (desserts) and you have a meal fit for an emperor.
