GREEN CHILI QUICHE 
Unbaked 10" pie shell
2 c. grated Jack cheese (8 oz.)
1 c. grated Cheddar cheese (4 oz.)
1 can (4 oz.) green chilies, chopped
3 eggs
1 c. half & half
Dash of salt

Bake pie shell at 400 degrees for 8 minutes. Cool. Sprinkle all of the Jack cheese in pie shell. Add 1/2 of the Cheddar cheese and spread evenly over first layer. Arrange chilies over the Cheddar cheese. Beat eggs and half & half with a fork; add salt; pour over cheese layers. Spread remaining cheese on top. Bake at 325 degrees for 45 minutes until pie barely shakes.
