PUMPKIN WHOOPIES 
2 c. brown sugar
1 c. vegetable oil
1 (16 oz.) can pumpkin
2 eggs
1 tsp. cinnamon
1 tsp. ginger
1 tsp. cloves
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
3 c. flour

Double cookie recipe.

Mix together and drop by spoonful on cookie sheet, 10 to 15 minutes at 350 degrees. When baked and cooled, make filling.

FILLING:

2 beaten egg whites
4 tbsp. flour
4 tbsp. milk
2 tsp. vanilla
2 tbsp. confectioners sugar
1 1/2 c. Crisco
3 1/2 c. confectioners sugar

Beat first 6 ingredients, then add 3 1/2 cups confectioners sugar, beat more and put between 2 cookies.
