CHICKEN ADOBO 
1 chicken, cut into pieces
1 tbsp. salt
1 tsp. peppercorns, crushed
1 bay leaf
1/2 c. vinegar (white)
1/2 c. water
1 1/2 tbsp. garlic powder
1/2 c. soy sauce

Place chicken in marinating container, add vinegar, salt, soy sauce, water and garlic. Marinate at least 24 hours for best results, the longer the better. Place mixture in pot and bring to a boil. Reduce heat and simmer 20-30 minutes until tender. Serve with rice and salsa use gravy for rice.

Salsa: Cut 6-8 green onions into 1/4 inch pieces dice 3-4 large tomatoes. Dice 3-6 chili peppers according to taste and squeezer 1 lemon over mixture. Add 1 tablespoon salt and stir well.
