CHICKEN ADOBO 
1 chicken, cut up, skinless
1 onion, chopped
1 clove garlic, crushed
1 tsp. salt
1 tsp. pepper
1/2 c. vinegar
1/3 c. soy sauce
1/2 tsp. dry ginger (or slivers of fresh ginger)

Marinate chicken pieces in above mixture 1 or more hours. Cook chicken in sauce until tender, approximately 1 hour. Serve over rice.
