ROBERTO'S ADOBO | |
1 c. rice vinegar 2 tbsp. crushed garlic 1 tsp. whole black pepper 3 bay leaves 1 tbsp. salt 4 tbsp. soy sauce 1 chicken, cut up 1/2 lb. pork, cut up 1 1/2 c. water This Filipino recipe is genetically passed from generation to generation. Not as good as Mom and Dad's adobo, but something your Lola would be proud you made. Combine ingredients except water. Marinate for 1/2 hour. Place pork, water, and marinade in saucepan and cook 30 minutes (simmering). Add chicken. Simmer additional 45 minutes to 1 hour. Eat as is or remove meat and brown in small amount of oil and return to reduced sauce. Serve with a big mound of rice. |
