BEANLESS BURRITOS | |
12 lg. flour tortillas 1 1/2 to 2 lbs. ground beef 1 med. onion, chopped 4 med. potatoes, diced 1 (16 oz.) can tomato sauce 1 sm. (3.5 oz.) can chopped green chilies 1/2 to 1 c. water 1 pkg. burrito flavor mix Brown beef and onion; drain well. Add potatoes, tomato sauce, green chilies, burrito mix, and water. Simmer until potatoes are done. Let cool 20 to 30 minutes before fixing tortillas. Place spoonful in center of tortilla. Fold over bottom, right side, then left side. Top is open. Can be frozen. Variation: Cook and add package or less of diced, mixed frozen vegetables. Add 1 cup of cooked rice per pound of beef instead of the diced potatoes. |
