APPLESAUCE DOUGHNUTS 
4 1/2 c. flour
1 c. sugar
3 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
2/3 c. buttermilk
1/2 c. applesauce
1/4 c. butter, melted or 1/4 c. oil
1 tsp. vanilla
2 eggs, slightly beaten
Oil for deep frying

In large bowl, combine flour, sugar, baking powder, soda, salt, nutmeg and cinnamon; blend well. Combine remaining ingredients; add to dry ingredients. Stir just until dry ingredients are moistened. If desired, chill dough for easier handling.

On well floured surface, toss dough lightly until no longer sticky. Roll half the dough at a time to a 3/8 inch thickness. Cut with floured doughnut cutter.

In deep fat fryer or heavy saucepan, fry doughnuts in 2-3 inch hot fat (375 degrees) for 1-1 1/2 minutes on each side or until golden brown. Drain on paper towel. Shake doughnuts in a bag with powdered or granulated sugar. 20-24 doughnuts.
