WINTER SOUP | |
2 tbsp. butter 3 med. onions, coarsely chopped 1 lb. stew beef, diced 1 garlic clove, minced 3 c. beef broth 1 (16 oz.) can tomatoes, undrained and chopped 2 med. potatoes, pared and diced 2 lg. ribs celery, diced 3 med. carrots, pared and diced 1 (10 oz.) box frozen cut green beans 1 c. dry red wine 1/2 tsp. dried basil 1/4 tsp. dried thyme Salt and pepper to taste In a 6-quart saucepan in the hot butter, cook onion until wilted. Over moderate heat, add beef and garlic and brown. Stir in broth, tomatoes, potatoes, celery, carrots, beans, wine, basil and thyme. Simmer 1 hour. Stir in salt and pepper. Makes 6 servings. |
