ZUCCHINI CLIPPERS 
2 med. zucchini squash (about 1 lb.)
1/4 c. finely chopped onion
1/4 tsp. basil
2 tbsp. chopped parsley
1 tsp. salt
Dash of white pepper
1 egg, beaten
2 tbsp. butter
1 1/2 c. Corn Chex, crushed to 3/4 c.
1/2 c. grated Parmesan cheese

Preheat oven to 350 degrees.

Cook zucchini in a small amount of boiling water for 5 minutes. Remove from stove and cut in half, lengthwise. Scoop out and save the pulp, being careful not to scoop too close to the skin.

Cut the zucchini pulp in chunks. Combine pulp chunks, onion, basil, parsley, salt, pepper, and egg. Fill the zucchini shells.

Combine melted butter, Corn Chex, and grated cheese. Sprinkle on the filled shells. Place zucchini in a flat baking dish and bake for 30 minutes.
