GLAZED CARROTS 
1 lb. carrots
1 tbsp. olive oil or safflower oil
3/4 tsp. dried basil, oregano or Italian seasoning
1 sm. clove garlic, minced
1 tsp. brown sugar
1/2 c. water
Fresh ground pepper

Peel or scrub carrots and cut into thin strips or pieces. Heat oil in frying pan, add carrots. Cover and cook over medium heat for 10 minutes, stirring occasionally. Add basil, oregano or Italian seasoning, sugar, garlic, water and pepper. Cook uncovered about 20 minutes until carrots are tender and liquid is reduced to a thin syrup.
