GINGER COOKIES 
4 c. flour
4 tsp. baking soda
1 tsp. ginger
1 tsp. cinnamon
1 tsp. salt
1 1/2 c. vegetable shortening
1 3/4 c. sugar
2 eggs
1/2 c. molasses
1/4 c. sugar for dipping cookies

Beat shortening, sugar, eggs, and molasses together. Work in dry ingredients. Chill overnight. Pinch off dough into 1" balls. Roll in sugar. Arrange about 2" apart on lightly greased cookie sheet. Bake in 350 degree oven for 10 minutes.
