YEAST BISCUITS 
1 pkg. dry yeast
1 c. warm water (105-115 degrees)
7 c. all-purpose flour
1/4 tsp. baking soda
2 tsp. baking powder
1/2 tsp. salt
2 c. nonfat buttermilk
3/4 c. vegetable oil
1/4 c. sugar
Vegetable cooking spray

Dissolve yeast in warm water; let stand 5 minutes. Combine flour, baking powder, soda, and salt; set aside. Combine buttermilk, oil, and sugar in a large bowl; add yeast mixture and 2 cups flour mixture. Beat at low speed of an electric mixer until smooth. Add remaining 5 cups flour mixture; stir until well blended. Cover and chill overnight.

Turn dough out onto a lightly floured surface, roll to 1/2 inch thickness, and cut with a 2-inch cutter. Place on ungreased baking sheets. Bake at 400 degrees for 15 to 18 minutes or until lightly browned. Remove from baking sheets; spray biscuits lightly with cooking spray. Yield: 4 1/2 dozen.
