SWEET POTATO PIE 
4 med. size yams or sweet potatoes
1 c. sugar
1/2 stick butter (4 tbsp.)
1/4 tsp. salt
1/2 c. coconut
1 tbsp. nutmeg
1 tbsp. cinnamon
1 tbsp. lemon flavor
1/4 tsp. vanilla flavor
3 eggs, separated
1/3 c. milk
1 unbaked 9 inch pie crust

Boil yams until well done. Peel and mash. In a large bowl, mix yams, sugar, butter, and salt; beat well. Add milk, lemon flavor, coconut, nutmeg, cinnamon, vanilla, and egg yolks. Mix until well blended. Beat egg whites until fluffy and fold into mixture. Put into pie crust shell and bake in 350 degree oven for 35-45 minutes.
