BUTTERMILK POTATOES 
2 tbsp. butter
2 c. raw potatoes, peeled & chopped
Salt & pepper to taste
1 c. buttermilk

Heat buttermilk in skillet, add 2 tablespoons butter then add potatoes and simmer until brown and tender.

IMITATION SOUR CREAM:

1 tbsp. lemon juice
1/2 c. buttermilk (low fat)
1 c. cottage cheese (low fat)

Blend in blender 1/2 minute. Use same measure as sour cream.
