BRUNCH EGG BAKE 
3 c. cheddar cheese
3 c. Mozzarella cheese
4 oz. mushrooms
1/3 c. green onions
1/2 med. red bell pepper
1/4 c. butter
8 oz. link sausage, browned
1/2 c. flour
1 3/4 c. milk
2 tbsp. parsley
8 eggs

Toss cheese. Sprinkle half of cheeses in ungreased 9"x13" baking dish. In skillet, cook mushrooms, onion, peppers in butter. Arrange over cheese. Cut sausage bite size and brown. Put on top of onions and peppers. Sprinkle remaining cheese over this (refrigerate at this point if not served immediately). Lightly blend flour into milk and eggs. Pour over layers in casserole. Bake at 350 degrees for 35 to 45 minutes. Let stand 10 minutes, cut into squares. Serves 12.
