NAVY BEAN SOUP | |
1 1/2 c. Great Northern beans 1 qt. water 1 ham bone 1 clove garlic, minced 1 onion, diced 1/2 c. celery, diced 1 med. sm. diced potato To soak beans: In quart of water, bring water to boil, then turn off stove. Cover, let stand one hour. Drain beans reserving all liquid. Measure this liquid and add enough water to make 2 quarts exactly. Place beans, water and ham bone in pot, cover and simmer for 2 hours. Add potatoes, onion, celery and garlic. Simmer for 1 more hour. Remove ham bone. Take 1 cup of beans of liquid and puree in blender, then add to soup. Mixture will become thicker. Delicious! |
