POLYNESIAN HAM CUBES | |
1 lb. cooked ham, cut in 1/2" cubes, about 3 c. 1 (11 oz.) can mandarin orange segments 1 (13 1/2 oz.) can pineapple tidbits Water 2 tbsp. cornstarch 1/4 tsp. cinnamon 2 tsp. soy sauce 1/2 tsp. chopped crystalized ginger or 1/4 teaspoon powdered ginger 2 tbsp. chopped onion 2 tbsp. chopped green pepper 1 c. sliced cooked celery 3 c. cooked rice Drain orange segments and pineapple tidbits, reserving liquid. Add enough water to fruit liquid to make 2 cups liquid. Combine cornstarch and cinnamon in a saucepan. Add fruit liquid, soy sauce, ginger, onion and green pepper. Cook, stirring constantly until thickened. Add ham, fruit and celery. Cook until heated through. Serve over rice. Six to eight servings. |
