Beat together well: 2 c. flour 2 c. sugar 3 eggs 1 tbsp. vanilla Sift together and stir in: 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt Stir in: 2 c. grated zucchini 1 c. chopped nuts (walnuts) 1/2 c. raisins 1 tbsp. grated orange peel (optional) Make 2 loaves, greased 4x8 inch pans. Bake in a preheated 350°F for 1 hour or until a toothpick inserted in center comes out clean.
