ZUCCHINI-PINEAPPLE BREAD 
Beat together well:

2 c. flour
2 c. sugar
3 eggs
1 tbsp. vanilla

Sift together and stir in:

1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt

Stir in:

2 c. grated zucchini
1 c. chopped nuts (walnuts)
1/2 c. raisins
1 tbsp. grated orange peel (optional)

Make 2 loaves, greased 4x8 inch pans.

Bake in a preheated 350°F for 1 hour or until a toothpick inserted in center comes out clean.

Nutrition (per serving) 187 calories, 40 calories from fat, 4.7g total fat, 31.7mg cholesterol, 216.8mg sodium, 114.6mg potassium, 33.9g carbohydrates. 1.1g fiber, 20.6g sugar, 3.4g protein.
