GRANDMOTHER HINCKLEY'S BLUEBERRY
MUFFINS
 
This recipe is from Maine and is over 150 years old.

3 tbsp. butter
2/3 cup sugar
1 egg, beaten
1/2 cup milk
1 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 to 1 1/2 cups blueberries

Cream together butter, sugar. Beat in egg. Add milk.

Whisk together flour, baking powder and salt.

Fold in 1 to 1 1/2 cups blueberries. Turn batter into greased muffin pan (12 cup).

Bake in a preheated 350°F oven for approximately 25 minutes.

While still warm from oven, brush with melted butter and sprinkle with coarse sugar.

Makes 12 regular sized muffins.

I made this recipe today as a bread and I think I have died and went to heaven. This is by far the best blueberry muffin (or in my case bread) that I have ever eaten. I fully intend to make it regularly as well as use the basic recipe with different berries. Thank you to Grandmother Hinckley whoever you are.

I made this recipe super healthy by using applesauce (no sugar added) in place of butter, Splenda sugar substitute , whole wheat flour and added slivered almonds and 2 tbsp. flax seed meal! I added an extra tbsp of applesauce and milk to the thick batter, which helped. Also baked them for 15 minutes at 350°F. They were STILL absolutely delicious! This is a great recipe that you can really make your own!

I needed a quick, easy recipe for muffins and this was delicious!! They were so moist and I used the mixed fruits (blueberries, raspberries and blackberries) because I didn't have enough blueberries. My kids ate them soo quickly! I am excited to try chocolate chip ones too!

I love finding an old recipe that stands the test of time. With this one, it's easy to see why. The blueberries are the main feature, not just sprinkled in, like so many newer muffins. This is not overly sweet, either. I used real butter, by the way, and slightly softened it before adding the sugar. This recipe made just 10 for me. I will make many times in the future...

Just wanted to add... I've made these with equal success by adding in chocolate chips instead of fruit. Until you get to the berries it's just a great basic muffin mix. Remember the extra 1/3 cup milk though. I prefer to use almond milk in making them. It adds something wonderful. :)

Add 1/3" extra milk...otherwise you'll have a dough rather than a batter. Be careful not to break the blueberries; fold in lightly. Amazing Recipe!!!
