CACCIUCCO 
1/2 c. olive oil
2 cloves garlic, chopped
1 red chili, chopped & seeds removed
8 oz. shelled shrimp
8 oz. squid, skinned, cleaned & chopped
1/2 c. dry white wine
3 tbsp. tomato puree
2 c. water
1/2 tsp. salt
8 oz. cod fillet, cut into pieces
8 oz. haddock, cut into pieces
4 slices of Italian or French bread, toasted
1 garlic clove, halved
2 tbsp. chopped pimento

Heat oil in large saucepan. Add the chopped garlic and chili and fry until garlic is lightly browned. Stir in shrimp and squid. Reduce heat to low and cover simmering for 30 minutes. Stir occasionally.

Pour in the wine and simmer uncovered for 15 minutes. Stir in puree, water and salt and bring to a boil. Stir in cod and haddock pieces, cover, reduce heat to low and simmer for 15 minutes or until fish flakes easily. Meanwhile, rub the toasted bread slices with garlic halves, then arrange a slice on the bottom of 4 individual bowls. Pour hot stew over bread, sprinkle with pimento and serve at once.
