KEY LIME PIE 
1 tbsp. gelatin
1/2 c. sugar
1/4 tsp. salt
4 egg yolks
1/2 c. lime juice
1/4 c. water
1 tsp. grated lime peel
2 drops green food color
4 egg whites
1/2 c. sugar
1 c. heavy cream, whipped
1 baked 9 inch pie shell

Mix gelatin, 1/2 cup sugar and salt. Beat together egg yolks, lime juice and water. Add to gelatin and cook, stirring until it comes to a boil. Remove from heat, stir in peel and food color. Chill, stirring occasionally until mixture mounds slightly when dropped from spoon.

Beat egg whites to soft peak, add sugar, beating until stiff. Fold in gelatin mixture, whipped cream and pile into shell. Chill. Garnish with additional grated lime peel.
