AUNT ELLEN'S CHOCOLATE PIE | |
1 prepared pie crust Pie Filling: 1 cup sugar 3 tbsp. cocoa powder 2 tbsp. all-purpose flour pinch salt 3 egg yolks, beaten 2 cups milk 1 tbsp. butter 1 tsp. vanilla In saucepan (without heat), mix together sugar, cocoa, flour, salt. Slowly stir in egg yolks and milk. Cook over low heat, stirring constantly until thickened. Remove from heat and stir in butter and vanilla. Pour filling into bowl to cool and cover with waxed paper. When cool, transfer to pie crust. Meringue (if desired): 3 egg whites 1/4 tsp. cream of tartar 4 tbsp. sugar Beat egg white with cream of tartar in small bowl until soft peaks form. Add sugar one tablespoon at a time until stiff peaks form. Bake 10 to 12 minutes at 350°F or until lightly browned. Submitted by: Tara Lain |
