SPANISH COFFEE CAKE 
2 1/2 c. flour
1 c. brown sugar
3/4 c. oil (light)
3/4 c. white sugar
1 tsp. cinnamon
1/2 tsp. salt
1/2 c. nuts, chopped
1 tsp. baking soda
1 c. buttermilk
1 tsp. baking powder
1 egg or egg substitute

Mix first 6 ingredients like pie crust. Remove 1/2 cup for topping. Mix with nuts. Mix all remaining ingredients with crust mixture; beat 4 minutes. Put into 2 loaf or round cake pans. Sprinkle on topping. Bake 30 to 40 minutes at 350 degrees. Makes 12 to 18 servings.
