WINTER GREENS & POTATOES 
1 lb. mixed greens (I use mustard & Kale), cleaned, chopped
2-3 potatoes, scrubbed, quartered & thinly sliced
2 tbsp. olive oil
1/4 - 1/2 tsp. red pepper flakes
16 oz. can whole tomatoes, drained, chopped
2 cloves garlic, minced
Fresh ground pepper
Parmesan cheese

Bring several quarts of water to boil, salted. Add potatoes, cook until tender (5 to 7 minutes). Remove with a strainer. Add greens to water, cook 3 to 5 minutes. Warm oil, add red pepper and potatoes. Stir to coat well. Add greens, garlic and tomatoes. Stir, cook a minute or so. Add pepper and Parmesan cheese. Good served with spicy bread, like pumpkin.
