FRESH SALSA 
3 medium tomatoes
3 small yellow hot peppers
3 scallions
handful of cilantro leaves
1 (14 1/2 oz) can of diced tomatoes, drained
3 tbsp. lime juice

Wash all fresh ingredients.

Quarter tomatoes, remove seeds.

Cut scallion bulbs and good leaves in chunks.

Remove large stems from cilantro.

Place all ingredients with 2 tablespoons lime juice in food processor.

Pulse until desired texture. Drain off excess liquid as desired and save for other recipes. Add last Tbsp. of lime juice. Cover and refrigerate. It gets hotter with time.
