CARROTS - PINEAPPLE SALAD 
1 pkg. orange Jello
1 sm. can crushed pineapple
1 carrots, grated

Prepare Jello as directed on package. Let Jello begin to thicken; add pineapple and carrots. Then jell, cut in squares. Serve on lettuce leaf with a small amount of mayonnaise, cream cheese or cottage cheese on each serving.
