VEGETABLE SAUTE (LIGHT) 
1 lg. onion, sliced in rings, thin
2 med. zucchini, sliced
20 to 25 snow pea pods
1/4 lb. fresh mushrooms, sliced
2 tbsp. butter
4 tbsp. olive oil
1 minced clove of garlic
Fresh ground pepper to taste
Salt if desired
1/2 c. Parmesan cheese
Rice or vermicelli

Heat oil and butter in a large skillet. Lightly saute garlic for 1 minute. Add onion, zucchini, pea pods and mushrooms. Cook al dente. Add seasonings and lightly toss. Serve over vermicelli that has been cooked al dente, or over rice. Top with grated Parmesan cheese. This is a family favorite!! (Can also be used as a vegetable side dish.)
