STUFFED CHICKEN BREASTS WITH
CRAB MEAT
 
3 chicken breasts, split and boned
1 lb. crab meat
1 egg
6 slices smoked ham
1 1/2 c. mayonnaise
2 tbsp. mustard
2 tbsp. lemon juice

Place sheet of aluminum foil on cookie sheet. Place breast halves on foil, side by side. Mix crab meat with egg, tossing lightly. Divide crab meat into 6 portions. Mound one portion of crab meat on top of each breast half. Cover each portion with ham slice. Bake in preheated 325 degree oven for 40 minutes.

To make sauce, blend mayonnaise, mustard, and lemon juice. Cook over low heat; do not allow to boil. Spoon over baked breasts at serving time. Makes 6 servings.
