COLORFUL VEGGIES 
1 carrot, peeled
1 yellow squash
1 zucchini squash
1 green bell pepper & 1 red bell pepper
1 onion, sliced
2 cloves garlic, chopped
1 tbsp. olive oil (or more)
1 tbsp. fresh basil, thyme or oregano (or some dried)
Salt & pepper

Cut vegetables into 1/2 inch julienne strips 2 inches long. Mix vegetables and put on a double thickness of foil. Cut on garlic herbs and oil. Close up foil. Bake at 350 degrees for 25-30 minutes.
