WHITE BEAN AND TOMATO CASSEROLE | |
2 tsp. olive oil 1 onion, sliced (3/4 c.) 1 clove garlic, minced 1 lg. tomato, chopped (1 1/2 c.) 1 med. green pepper, chopped (1 c.) 1/2 tsp. basil 1/2 tsp. salt 1/4 tsp. oregano 1/8 tsp. pepper 1 (16 oz.) can white beans, drained (Great Northern Beans) 1/4 - 1/2 c. chopped fresh parsley Saute onion in olive oil until tender. Stir in garlic, tomato and green pepper; cook for 1 minute. Stir in herbs, salt, pepper and beans. Simmer for 5 minutes or until flavors are blended. Stir in parsley. May be served hot or cold. Makes 3 cups. 230 calories per cup, 12% fat, 9 grams fiber. |
