NEW GREEN BEAN CASSEROLE | |
2 lb. green beans, trimmed 2 tbsp. butter 8 oz. white mushrooms, quartered 2 shallots, washed and chopped 2/3 cup light cream 1 (5.2 oz.) pkg. garlic and herb flavored cream cheese, spreadable 2 tbsp. grated Parmesan cheese. 1 tbsp. chopped thyme 1/4 tsp. pepper 1 cup canned French-fried onions In large pot of boiling salted water, cook green beans just until tender, about 5 minutes. In large skillet, melt butter over medium high heat. Add mushrooms and shallots. Cook, stirring occasionally for 3-5 minutes or until golden and soft. Stir in beans and remove from heat. In microwave safe bowl, microwave light cream and cream cheese on high in 30 second intervals, stirring until smooth. Stir in Parmesan, thyme and pepper. Transfer bean mix to a large serving bowl, top with cheese mix, sprinkle with onions. Or put bean mix in large casserole dish, mix in the cheese mix and put in a 350°F. oven for about 10 minutes. Sprinkle with fried onions at the minute before serving. My daughter says this is better than her favorite green bean casserole. Submitted by: Sherry Monfils |
