SAUSAGE RICE CASSEROLE 
2 pkgs. chicken noodle soup mix
1 c. boiling water
1 lb. pork sausage patties
4 c. chopped celery
1 chopped green pepper
1 lg. onion, chopped
1 c. quick rice
1/2 c. sliced almonds
1/2 c. mushrooms, canned

Mix chicken noodle soup mix and boiling water together. Cook together 10 minutes; set aside to cool. Fry sausage until brown and break into pieces. Add onion, celery, peppers and cook until clear (not mushy) over low heat, drain off excess grease.

Combine soup and sausage mixture. Add 1 cup of rice (uncooked) and the mushrooms plus liquid and almonds. Moisten mixture well with water. I use at least 2 cups. Put mixture in a 9"x13" greased pan. Bake 1 hour at 350 degrees. Serve hot.
