HAM KABOBS 
1 lb. ham, cut into 1 inch cubes
1 lb. bell pepper, cut in squares
1 (8 oz.) can whole onions, drained
1 (10 oz.) can pineapple chunks
1/2 pt. cherry tomatoes
1/2 lb. whole mushrooms
1 c. apricot preserves
2 tbsp. ketchup
1 tbsp. soy sauce

Combine preserves, ketchup, and soy sauce. One eight 12 inch skewers, alternate ham, pepper, onions, pineapple, tomatoes, and mushrooms. Broil kabobs until browned on all sides, basting with preserve mixture. Serve over rice. Garnish with remaining pineapple chunks. Serves 4.
