ORANGE ORANGE ROUGHY | |
1/4 c. orange juice 4 orange roughy fillets 2 tbsp. olive oil 1 tbsp. dried tarragon 1 tbsp. black pepper Grated zest of 2 oranges Preheat oven to 350 degrees. Pour orange juice into shallow baking pan. Brush fish with oil on both sides. Place in baking dish. Combine tarragon, pepper, orange zest in a small bowl and sprinkle over fish, patting lightly to form a thin crust. Bake until fish flakes easily, about 20 to 25 minutes. Carefully transfer fish to platter. Serve at once. |
